What I want to say is that we have produced a large amount of knowledge collectively. However, we only know a small portion of what is known individually.

Since knowledge is an uncountable noun, the correct grammar should be using "is", but I'm not sure.

By the way, does the sentence convey what I want to convey?

Yes, you should use "is". Yes, your sentence indicates that there are many things that more people should know. – Gary Botnovcan Jan 23 at 0:37
